Materials

  • 2 cups fresh strawberries hulled and chopped
  • 1 cup heavy cream
  • 1 cup whole milk
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tablespoon lemon juice optional

Instructions

Prepare the Strawberry Puree:

  • In a blender or food processor, combine the fresh strawberries and lemon juice (optional). Blend until smooth, and then set aside.

Make the Ice Cream Mixture:

  • In a mixing bowl, whisk together the heavy cream, whole milk, sugar, and vanilla extract until the sugar is dissolved and the mixture is smooth.

Combine the Strawberry Puree with the Ice Cream Mixture:

  • Gently fold the strawberry puree into the ice cream mixture using a silicone spatula. Swirl the strawberry puree throughout for a marble effect, leaving some strawberry chunks for texture.

Fill the Molds:

  • Pour the mixture into ice cube trays or popsicle molds. Tap the molds gently to remove any air bubbles. If you want to add more texture, you can swirl a little extra puree on top before freezing.

Freeze:

  • Place the filled molds in the freezer and let them freeze for at least 4 hours or until solid.

Unmold and Serve:

  • Once fully frozen, carefully remove the bars from the molds. Serve immediately, or store in a freezer-safe container for later enjoyment.

Notes

If you prefer smoother bars, you can strain the strawberry puree to remove seeds before mixing it with the ice cream mixture.
Add chocolate chips or a drizzle of melted chocolate on top of the bars after un-molding for a fun twist.
These bars can be customized with other fruit flavors like blueberries or raspberries for variation.
