Equipment

  • Olive oil (or coconut oil)
  • Salt
  • Ground black pepper
  • Garlic powder
  • Paprika
  • Chili powder (optional)
  • Fresh parsley

Materials

  • 4 medium-sized purple sweet potatoes
  • 1 tablespoon olive oil or coconut oil for a slightly sweeter flavor
  • Salt to taste
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder optional, for some heat
  • 1 tablespoon fresh chopped parsley for garnish

Instructions

Preheat Oven:

  • Preheat your oven to 400°F (200°C).

Prepare Sweet Potatoes:

  • Wash the purple sweet potatoes thoroughly and peel them if desired. Cut them into 1-inch cubes or wedges.

Season:

  • In a large mixing bowl, toss the sweet potato cubes with olive oil, salt, pepper, garlic powder, paprika, and chili powder. Make sure the potatoes are well-coated with the seasoning.

Roast:

  • Spread the seasoned sweet potatoes in a single layer on a baking sheet. Bake for 30-35 minutes or until they are golden brown and tender when pierced with a fork. Flip the potatoes halfway through cooking to ensure even roasting.

Garnish and Serve:

  • Remove from the oven and sprinkle with freshly chopped parsley. Serve warm as a side dish or enjoy them as a healthy snack.

Notes

You can swap olive oil for coconut oil to enhance the sweetness of the purple sweet potatoes.
Adjust the amount of chili powder to your preference for a spicier dish.
Purple sweet potatoes have a rich, earthy flavor, so they can pair well with a variety of proteins, such as grilled chicken or fish.
